Malt has been roasted for many years. The process is well known and did not see new actors and improvements over the past decade. Revtech Process Systems, European manufacturer of heat treatment equipment has developed a new technology. It allows a great control of the processing parameters (flow rate, residence time and temperature) and is achieving a wide range of flavors and colors. The equipment is flexible and can treat different cereals: barley, wheat, oats, rye, corn and ancient grains. Trials were carried out on Revtech pilot scale unit for different applications: pasteurization of grains, plasticizing before flaking and roasting. Microbial, temperature, moisture and EBC results were shared. This technology was tried and has already been installed by companies wishing to be at the forefront of the malt roasting possibilities (United States, UK, Belgium, South Africa and Japan).
